It is hard to find a more delicious and satisfying dinner that the whole family will love. Leave a little bit of time to make this delicious dish but the process is well worth it.

Prep time: 20 minutes Cooking time: 14 minutes Serves 4-6
1 lb (500 g) or 4 chicken breasts
1/2 tsp (2 mL) each salt, pepper and garlic powder
1/2 cup (125 mL) all-purpose flour
2 eggs
1/2 cup (125 mL) milk
1 1/2 cups (375 mL) breadcrumbs
2 tbsp (30 mL) salted butter
2 tbsp (30 mL) vegetable oil
1 cup (250 mL) tomato sauce
1 cup (250 mL) shredded mozzarella cheese
1/4 cup (60 mL) Italian parsley, chopped
Slice chicken breasts in half horizontally to make thin chicken cutlets. Using a meat mallet, pound until each cutlet is 1/4 inch thick. Sprinkle each cutlet with salt, pepper and garlic powder on both sides.
Place flour in a shallow dish. In a separate shallow dish, whisk together eggs and milk to make an egg wash. In one last shallow dish, sprinkle the breadcrumbs. This makes your breading station. Dredge one chicken cutlet at a time through the flour, then the egg wash and lastly cover in breadcrumbs and set aside on a baking sheet until ready to fry. Continue until all chicken cutlets have been breaded.
Heat butter and oil in a large frying pan over medium-high heat (level 6). Once lightly bubbling, add three cutlets into the frying pan in a single layer and cook for 2 minutes on each side. Place fried cutlets on a racked baking sheet. Continue process until all cutlets have been fried. Add more butter and oil if needed.
Preheat oven to 375°F. Spread 2 tbsp (30 mL) sauce on each cutlet and sprinkle with cheese. Bake for 10 minutes or until cheese is melted and bubbling. sprinkle with parsley and serve with a side of pasta and a light salad.
